Eating Green – Mother’s Day for Mother Earth

By Rotarian Gopal K. Kapur

Eating Green, a program of personal practices, is designed to show deep personal commitment to green living. Based on the adage: “Think Globally, Act Locally,” the program asks that you pledge to eat one day a month only raw ‘green’ foods – foods that have been minimally processed after harvesting -- only ‘raw’ vegetables, fruits, nuts, seeds, honey, and water from the tap. Eating Green will save gasoline, electricity and cooking gas, all used to commercially process and transport foods, as well as for home and restaurant cooking. Eating Green reduces the waste produced by processed food packaging – glass, plastic, paper, and metal.

Eating Green one day a month provides you and your family a degree of personal commitment to the global cause of ‘green living.’ The rules for Eating Green are:

· All food is eaten raw, choose foods that have been minimal processed and shipped after harvesting; visit local or nearby farmer’s markets

· No wood or charcoal fires, gas burners, or barbeques

· No electrical appliances – micro wave oven, blender, juicer, coffee maker, stove, or oven. Use only mortar, pestle, and manually operated devices

· No disposable plates, cups, napkins, paper towels, or plastic utensils

· No bottled water, no soft drinks, no alcohol, no coffee or tea; this is the opportunity to drink just water or hand squeezed juices

· Minimal TV, telephone, and computer use; it’s a day to reflect, talk, walk, exercise, garden, sing, dance, relax, and frolic

It might seem to be a difficult change to make, but I assure you that once you have made the change, you will be surprised at the benefits of reduced cost, saved time, waste reduction, and a feeling of well being. Remember, you and your family will be making a statement that you do care about our beautiful planet. Participants in the program will receive well tested recipes for breakfast, lunch, dinner, and desserts.

There is no charge to join the program and receive recipes for Eating Green program; participants are requested to make a donation of $25 each year to a charity of their choice – preferably your Rotary club; proof of donation is not required.
